Bread crumb topping for shell fish

Made a topping for pasta dish the other day and found that it would go prefect on mussels and other shell fish.

Ingredients:

180g Tesco Finest Oak Smoked Lardons (alternative maybe pancetta)
150g Strong Cheddar cheese
4 slices of country grain bread (or 2 large rolls)
3 fresh rosemary sprigs

Brown off Lardons in a pan.
Grate cheddar and place into food processor along with the browned Lardons, leaves from the rosemary sprigs and a decent dizzle of olive oil. Blitz until a coarse breadcrumb consistency is achieved.

Use the mix to top off mussels in shells, place under grill to toast/brown.
